KOOTU CURRY /yam, ash gourd and bengal gram dal side dish

Kootu curry is a famous kerala sadhya dish. This dish is made with yam, ash gourd and bengal gram dal. The addition of jaggery to it will give a slight sweet taste to the kootu curry.


Ingredients

Yam (chena) --------------------------------1 cup ( cut in to cubes).
Ash gourd (kumbalanga)------------------1 cup ( cut in to cubes)
Bengal gram dal (Kadala paruppuppu)--1/2 cup (soak in water for at least an hour)
Turmeric powder----------------------------1/2 tsp
Chilli powder--------------------------------1 tsp
Pepper powder------------------------------1/2 tsp
Jaggery---------------------------------------1


 For grinding
Grated coconut -----------------------------1/4 cup
Cumin seeds---------------------------------1/2 tsp

 For tempering
Oil --------------------------------------------2 tsp
Mustard seeds-------------------------------1/4 tsp
Dried red chillies----------------------------2
Curry leaves---------------------------------2 sprigs
Grated coconut------------------------------1 1/2 tbsp for roasting

Method


  1. Boil bengal gram dal, yam, ash gourd with little water and salt. 
  2. Add turmeric powder, chilli powder and jaggery to it.
  3. Now grind grated coconut and cumin to a smooth paste and add it to the cooked dal.
  4. Cook till all water is dried up. Make sure that the dal and vegetables don't get mashed up and you get a bite of it.
  5. Next do the tempering. For this add oil to a pan and splutter mustard seeds, dried red chillies and curry leaves. 
  6. Now add grated coconut and roast it till light golden brown. 
  7. Pour the tempering to the cooked dal mixture.
  8. Serve this as side dish for rice.
