OKRA MASALA (Lady's finger/Bhindi/Vendakka masala)





INGREDIENTS


Okra--------------------------- 1lb
Tomato------------------------ 1/2 cup,sliced
Onion--------------------------  1/4 cup,sliced
Ginger garlic paste--------- 1tbsp
Turmeric powder----------- 1/2 tsp
Red chilly powder----------- 1 tsp
Coriander powder----------- 1tbsp
Green chilly--------------------2,slit lengthwise
Oil---------------------------------1 tbsp
Mustard seeds-----------------1/2 tsp
Cumin seeds--------------------1/4 tsp
Asafoetida-----------------------a pinch
Curry leaves--------------------a spring (optional)
Coriander/cilantro leaves-- for garnish
Salt------------------------------- as needed


METHOD

  1. Trim off both ends of okra and cut lengthwise in to four.
  2. In a medium heat pan add a tbsp of oil and splutter mustard seeds,cumin seeds and curry leaves.
  3. Add a pinch of Asafoetida to it.
  4. Then add ginger garlic paste and saute till the raw smell goes. Do this in low flame.
  5. Next add onions, green chilly and tomatoes. Saute till it is soft.
  6. Then add okra and needed salt.Saute for 2 minutes.
  7. Next add turmeric powder,red chilly powder and coriander powder.
  8. Mix it good and cook it covered in low flame.
  9. Once the okra is fully cooked,transfer it to a serving bowl and garnish with cilantro leaves.
  10. Serve with chapathi,rice etc.

  6. I like that you've shredded/cut the okra rather than keep them whole. I will have to do that next time I make this dish for my husband.
