Mushroom ----------------1cup , chopped
Onion----------------------- 1 medium sized, chopped
Ginger Garlic paste----  1tbsp
Green chilly--------------  1, sliced lengthwise
Tomato--------------------  1 small , chopped
Oil--------------------------  1 tbsp
Mustard seeds---------   1/2 tsp
Curry leaves ------------  as needed
Salt -----------------------   as needed
Red chilly powder-----   1tsp
Coriander powder-----   1bsp
Turmeric powder------   1/4 tsp
Garam masala powder- 1/4 tsp
Black pepper powder--  1/4 tsp
Vegetable masala or
Chicken masala  ------   1tsp  
Cilantro leaves for garnish

  1. In  a medium heat pan, add a tbsp oil and splutter mustard seeds. Then add curry leaves and saute chopped onions and little salt.
  2. Once the onions are completely cooked, add ginger- garlic paste. Cook till a nice flavour comes.
  3. Then add the green chilly and tomatoes and cook till it becomes soft.
  4. Next add in all the masalas in the following order-turmeric powder, black pepper powder,red chilly powder, coriander powder, garam masala powder and veg/ chicken masala. Add a little water so that the spices won't get burned. Also, do this in low flame.
  5. Cook till the raw smell of masala goes.
  6. Then add the mushrooms. Add needed water (don't add too much water) and salt and cook by covering with a lid.
  7. Cook till all water is evaporated and mushrooms are fully done.
  8. Transfer to a serving bowl and garnish with cilantro leaves.
This goes excellent with rice, chapathi, idli ,dosa and bread
