GHEE RICE / NEYI CHORU



INGREDIENTS:

Basmati rice  -------------  2 cups
Water ---------------------   4 cups
Ghee ----------------------   3 tbsp
Salt ------------------------   as needed
Ginger Garlic paste ----  1 1/2 tbsp
Onion ----------------------  1 medium sized, sliced lengthwise
Garam masala powder-- 1/4 tsp
Whole garam masala
 Cinnamon ----1 inch piece
Cardamom---  2
Cloves--------   2
Saunf (perumjerrakam)--  a pinch

For Garnish
Onion--------------1/4 sliced thinly lengthwise
Oil for frying onions
Rice flour-------- 1 or 2 tsp
Cashews----------as needed
Kismis------------ as needed

MEHOD:

For Garnish
  1. Heat oil in a vessel.
  2. Mix rice flour in onion , so that it will be crispy.
  3. Once the oil is heated perfectly, add the onions and fry it till it becomes slightly golden brown.
  4. Keep the fried onions aside.
  5. Next in a medium heat pan and add a tbsp of ghee and roast cashews and kismis one after the other and keep aside.
Preparation of Ghee rice
  1. Soak rice in warm water for 30 minutes. This helps even cooking and rice will not stick together.
  2. In a well bottomed vessel add a tbsp of ghee and then add the whole garam masalas.
  3. Next add the sliced onions and saute it till the onions becomes translucent.
  4. Next add the Ginger Garlic paste.
  5. When a nice aroma comes , add rice and stir. Then add the water and salt. Also add garam masala powder . Add a tbsp of ghee if needed.
  6. Cook covered in medium flame.
  7. Once all the water is evaporated , switch off the flame.
  8. Transfer this to a serving bowl and add the fried onions, roasted cashews and kismis on top and serve.
Note
  •  You can also add few drops of lemon juice along with water added to boil rice. This prevents the rice sticking together.
  • You can also cook this in pressure cooker.
  • Don't add too much water . The ratio should be 1:2 .
  • Check the salt before cooking rice as its not possible to add or reduce the salt after rice is cooked. Also, this brings the taste of the whole dish.
